Scalloped Chicken
Ingredients
- chicken
- potatoes
- chicken broth
- cornstarch
- milk
- celery salt
- egg
- onion salt
- cracker crumbs
Directions
- Cut raw potatoes in dice and parboil 10 minutes in salted water.
- Same quantity cold chicken, diced.
- Make sauce of chicken-broth, thickened with cornstarch, wet in hot water.
- If not sufficient broth, use milk.
- To 1 pint of liquor, use 1 egg, beaten.
- Season to taste, celery and onion salt.
- Put a layer of chicken, then potatoes, then sauce, etc.
- Cover with cracker crumbs moistened in melted butter.
- Bake one-half hour.
