Rhubarb-Orange Pie

Ingredients

  • 2 cup rhubarb, finely cut
  • 1 orange, grate rind and squeeze juice of 1/2
  • 1 cup sugar
  • 2 tablespoon cornstarch
  • 2 eggs
  • 1 pastry

Directions

  1. Make pastry and line pie plate and roll dough for top strips.
  2. In the bowl used for making pastry, combine rhubarb, orange juice and rind, and sugar with cornstarch blended in.
  3. Place rhubarb mixture into pie plate.
  4. Using the same bowl, put in eggs and beat until slightly thickened.
  5. Pour over rhubarb mixture.
  6. Cover with pastry strips.
  7. Bake 10 minutes in 425f oven and reduce heat to 325f for 35 min.
  8. Cool before serving.
