Orange Filling for the Cake

Ingredients

  • 1/2 cup sugar
  • Grated rind of 1/2 an orange
  • 3 tablespoon flour
  • 1/8 teaspoon salt
  • 1/4 cup water
  • 1 egg yolk
  • 1/4 cup orange juice
  • 1/2 teaspoon lemon juice

Directions

  1. Mix the flour, sugar and salt well; add slowly the egg-yolk and the grated rind, the orange juice and water.
  2. Cook slowly over hot water for ten minutes, or until thick enough to spread.
  3. Add the lemon juice or lemon extract.
  4. Spread on one layer of cake.
  5. Place the other layer carefully on the top and spread quick cake icing over the top and sides of the cake.
