Mushroom Sauce

Ingredients

  • 1 cup chicken fat
  • 2 teaspoon salt
  • 1/4 cup water
  • 1/2 teaspoon paprika
  • 1 1/4 cup flour
  • 7 cup milk

Directions

  1. Mix the fat and flour carefully, add the water, salt and paprika.
  2. Cook one minute, stirring constantly, add one-half of the milk and cook until the mixture gets very thick.
  3. Beat one minute, add the rest of the milk and cook again, still stirring continuously.
  4. When the sauce is very thick and creamy, add the mushrooms.
  5. Stir over a hot fire for one minute.
  6. This allows the mushrooms to get hot.
  7. Serve one tablespoonful of the mixture around each croquette.
  8. The sauce may be reheated by adding two tablespoons of milk, and placing over a hot fire.
