Meat Balls

Ingredients

  • 1 cup raw beef, cut fine
  • 1/8 teaspoon paprika
  • 1/4 cup bread crumbs
  • 1 teaspoon chopped parsley
  • 2 tablespoon milk
  • 1/4 teaspoon onion salt
  • 1 egg yolk
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon salt
  • 3 tablespoon bacon, fat

Directions

  1. Soak the crumbs, milk and egg together for five minutes.
  2. Add the beef, salt, paprika, parsley, onion and celery salt.
  3. Shape into flat cakes one inch thick, two and a half inches in diameter.
  4. Place the fat in the frying-pan and when hot, add the cakes.
  5. Lower the flame and cook seven minutes over a moderate fire, turning to brown evenly.
  6. Serve on a hot platter.
  7. Garnish with parsley.
  8. Serve with egg sauce.
