Lemon Pie
Ingredients
- 1 cup sugar
- 1 lemon, grated rind
- 3 teaspoon cornstarch
- 11 lemons, juice
- 1/8 teaspoon salt
- 3 egg yolks
- 1 1/2 cup boiling water
- 1/2 tablespoon butter
- pastry, crust
Directions
- Mix sugar, cornstarch and salt in top of double boiler, add boiling water slowly and stir.
- Cook over the fire until boiling point is reached.
- Place over hot water and cook 20 minutes, stirring occasionally.
- Mix butter and stir.
- Grated rind and juice of lemon and egg yolks, slightly beaten.
- Add cook two minutes.
- Cool and turn into a cooked pastry crust.
- Spread meringue and bake 8 minutes in moderate oven.
