Lemon Pie

Ingredients

  • 1 cup sugar
  • 1 lemon, grated rind
  • 3 teaspoon cornstarch
  • 11 lemons, juice
  • 1/8 teaspoon salt
  • 3 egg yolks
  • 1 1/2 cup boiling water
  • 1/2 tablespoon butter
  • pastry, crust

Directions

  1. Mix sugar, cornstarch and salt in top of double boiler, add boiling water slowly and stir.
  2. Cook over the fire until boiling point is reached.
  3. Place over hot water and cook 20 minutes, stirring occasionally.
  4. Mix butter and stir.
  5. Grated rind and juice of lemon and egg yolks, slightly beaten.
  6. Add cook two minutes.
  7. Cool and turn into a cooked pastry crust.
  8. Spread meringue and bake 8 minutes in moderate oven.
