Honolulu Salad

Ingredients

  • 6 slices canned pineapple
  • 1/4 teaspoon salt
  • 1/2 cup cottage cheese
  • 6 nutmeat halves
  • 1 tablespoon chopped pimento
  • 6 pieces of lettuce
  • 1 teaspoon chopped green pepper
  • 6 tablespoon salad dressing

Directions

  1. Add the chopped pimento, green pepper and salt to the cottage cheese.
  2. Work all together well, shape into balls one inch in diameter.
  3. Place a ball in the center of each slice of pineapple, which has been arranged upon a piece of lettuce.
  4. Place a nut meat upon the top of each cheese ball.
  5. Serve one tablespoon of salad dressing upon each service.
