Custard Pie II
Ingredients
- 4 3/4 cup sugar, (2 pounds, 6 ounces)
- 1 1/2 tablespoon salt
- 30 eggs, beaten
- 3 3/4 quart evaporated milk
- 3 3/4 quart boiling water
- 1 1/2 tablespoon vanilla
- dash nutmeg
Directions
- Add sugar and salt to beaten eggs.
- Scald milk and water in double boiler and pour over egg mixture.
- Add vanilla and pour at once into unbaked pie shells.
- Fleck top with nutmeg.
- Start pies to bake in a hot oven (450f).
- After 15 minutes baking at this temperature, decrease to a slow oven (325f) and bake until custard gives the clean knife test, about 25 minutes longer.
- Coconut custard pie variation: after custard filling has been poured into the pie shell, sprinkle 1/2 cup grated coconut over top of each pie.
- Bake same as custard pie.
