Chicken and Tomato Soup

Ingredients

  • 1 tablespoon butter
  • 2 sprigs parsley, chopped fine
  • 1 tablespoon cornstarch
  • 1/2 can tomatoes
  • 2 slices onion
  • 3 cup chicken broth
  • salt
  • pepper

Directions

  1. Cook the onion and parsley in the hot butter until yellowed.
  2. Add the tomatoes and broth and let simmer fifteen minutes.
  3. Press through a sieve.
  4. Reheat to boiling point; stir in cornstarch ; let cook ten minutes.
  5. Skim and season to taste.
