Chicken a la King

Ingredients

  • 2/3 cup cold, cooked chicken, diced
  • 2 tablespoon flour
  • 3 tablespoon butter
  • 1 1/2 cup milk
  • 1 tablespoon green pepper, cut fine
  • 1/4 teaspoon salt
  • 1 tablespoon pimento, cut fine
  • 1 egg yolk, beaten
  • 1/8 teaspoon celery salt
  • 3 slices toast

Directions

  1. Melt the butter, add the green pepper, cook slowly for two minutes, and then add the flour.
  2. Mix well and add the milk slowly.
  3. Cook until creamy.
  4. Add the celery salt and the salt.
  5. Wvhen very hot, add the beaten egg-yolk.
  6. Mix well, and add the chicken and pimento.
  7. Reheat.
  8. Serve very hot on hot toast.
  9. Do not cook the sauce any longer than absolutely necessary after the egg-yolk is added.
