Carrot Marmalade

Ingredients

  • 1 pound carrots
  • 2 lemons
  • 1 1/2 pound sugar
  • 1/2 cup chopped nuts

Directions

  1. Clean and scrape carrots, cook until soft, then mash.
  2. Add sugar, juice of 2 lemons and the grated rind of 1 lemon.
  3. Cook 20 minutes, stirring frequently.
  4. Add the chopped nuts, pour into hot, sterile jars and seal.
