Baked Prune Whip
Ingredients
- 2 cup cooked prunes
- 2 teaspoon lemon juice
- 1 teaspoon grated lemon peel
- 4 tablespoon confectioners sugar
- 4 stiff-beaten egg whites
Directions
- Remove pits from prunes and mash to a pulp.
- Add lemon juice, peel, and 2 tablespoon sugar; blend well.
- Add remaining 2 tablespoon sugar to egg whites; beat until stiff.
- Fold prune mixture slowly into egg whites.
- Pile lightly in greased baking dish.
- Bake in moderate oven (350f) 20-30 minutes.
