Cereal Cooked In Milk

  1. Bring water and milk to a boil, stirring occasionally.
  2. Add salt and cereal, and boil briskly about 10 minutes, stirring constantly.
  3. Or set over boiling water and cook 30 minutes.
  4. Corn meal variation: use same amount of water, evaporated milk and salt as above; measure 7 1/4 cups (2 1/4 pounds) corn meal into a heavy saucepan; add water and salt; boil until mixture begins to thicken, then add milk and continue boiling 8 to 10 minutes, stirring constantly; or set over boiling water, and cook 30 minutes.
  5. Corn meal mush for frying variation: increase corn meal to 14 1/2 cups (4 1/2 pounds).
