Curry of Mutton
Ingredients
- 2 pound mutton, from the forequarter
- 1 teaspoon vinegar
- 1 onion
- 1 teaspoon curry powder
- 2 tablespoon flour
Directions
- Fry the meat in a little of the fat until it is a delicate brown.
- Add the onions and pour over all enough boiling water barely to cover.
- Cook until the meat is tender.
- Add the curry powder, vinegar and salt.
- Remove the meat, reduce the broth to one cup, and thicken it with two tablespoons of flour blended with one tablespoon of melted fat.
- Add the meat to the gravy and reheat.
- Serve with rice.
