Curry of Mutton

Ingredients

  • 2 pound mutton, from the forequarter
  • 1 teaspoon vinegar
  • 1 onion
  • 1 teaspoon curry powder
  • 2 tablespoon flour

Directions

  1. Fry the meat in a little of the fat until it is a delicate brown.
  2. Add the onions and pour over all enough boiling water barely to cover.
  3. Cook until the meat is tender.
  4. Add the curry powder, vinegar and salt.
  5. Remove the meat, reduce the broth to one cup, and thicken it with two tablespoons of flour blended with one tablespoon of melted fat.
  6. Add the meat to the gravy and reheat.
  7. Serve with rice.
