Chicken Noodle Soup

Ingredients

  • 4 pound chicken
  • 2 teaspoon salt
  • 2 quart water
  • 3 cup cooked noodles
  • 1 teaspoon peppercorns
  • 1 bay leaf
  • 1 small onion, sliced
  • 1 tablespoon parsley, chopped
  • 1 carrot, sliced
  • salt
  • pepper

Directions

  1. Cut a young stewing chicken into serving pieces, bring to a boil and simmer for 2 1/2 hours, adding water as needed.
  2. Skim of the fat and add peppercorns, bay leaf, onion, parsley, carrot, salt and pepper.
  3. Bring to boil again and add noodles, preferably home made noodles.
  4. Cook for 20 minutes longer.
