Walnut Gingerbread

Ingredients

  • 2 teaspoon baking soda
  • 1 cup light brown sugar
  • 1/2 teaspoon ginger
  • 1/2 cup shortening
  • 1/2 teaspoon cinnamon
  • 1/2 cup black molasses
  • 1 cup boiling water
  • 1/2 teaspoon cloves
  • 3 1/2 cup flour
  • 2 eggs
  • 3/4 cup chopped black walnuts

Directions

  1. Cream the sugar and shortening in a bowl.
  2. Add the molasses and pour the cup of boiling water over it.
  3. Mix well.
  4. Combine the flour, soda and spices, sift and add to the molasses mixture, beating well.
  5. Add the eggs one at a time and blend thoroughly.
  6. Next add the chopped nut meats.
  7. Pour into a well greased loaf pan and bake in moderate oven (350f) for 40 minutes.
