Tomato-Meat Sauce

Ingredients

  • 2 1/2 cup fresh or canned (No. 2 can) tomatoes
  • 2 tablespoon fat
  • 2 tablespoon flour
  • 1/2 garlic clove
  • 1 teaspoon sugar, if desired
  • 1 bay leaf
  • 1/4 pound ground beef
  • 1 teaspoon salt
  • 1/4 cup chopped onion
  • pepper
  • 1/4 cup minced green pepper

Directions

  1. Cook together the tomatoes, garlic, and bay leaf about 20 minutes for fresh tomatoes, 10 for canned.
  2. Press through a sieve.
  3. Brown the beef, onion, and green pepper in the fat.
  4. Blend in the flour.
  5. Add cooled, sieved tomatoes, sugar (if used), salt, and pepper.
  6. Cook over low heat , stirring constantly, until thickened.
  7. Serve hot on cooked spaghetti, noodles, or rice.
