Super Angel Food Cake



  1. Pour the egg whites on a platter, add the salt and beat with a fat eggbeater until foamy.
  2. Add the cream of tartar and continue to beat until the eggs are stiff enough to hold up in peaks, but not dry.
  3. Fold in the sugar, sifted, one tablespoonful at a time.
  4. Add flavoring.
  5. Fold in the flour in the same manner as the sugar and then the nut meats.
  6. Pour in an ungreased cake tin and bake in a very slow oven, about 50 minutes, increasing slightly when the cake is almost done.
