Saybrook Lemon Jelly Roll

Ingredients

  • 3/4 cup sifted cake flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • Lemon Filling
  • powdered sugar

Directions

  1. Set oven for hot 400f.
  2. Sift flour; measure; mix and sift flour, salt, and baking powder.
  3. Beat eggs until light and lemon-colored.
  4. Add sugar to eggs gradually, beating constantly.
  5. Sift small amount flour mixture on egg mixture; fold in.
  6. Continue until flour mixture is all added.
  7. Fold in vanilla extract.
  8. Line jelly roll pan, 15 by 10 by 1 to inches, with waxed paper.
  9. Grease paper and sides of pan.
  10. Pour cake batter in pan.
  11. Bake 13 minutes.
  12. Remove cake from pan to damp cloth.
  13. Remove paper.
  14. Trim edges of cake.
  15. Spread with lemon filling; roll up quickly.
  16. Dust with confectioners' sugar.
