Peanut Cookies

Yield: 6 dozen cookies



  1. Cream shortening.
  2. Add sugar and continue creaming until light and fluffy.
  3. Beat in the eggs, then add milk and lemon juice.
  4. Sift flour, then measure.
  5. Resift with baking powder and salt into first mixture.
  6. Stir in peanuts.
  7. Drop from a spoon onto slightly greased baking sheets.
  8. Flour palm of hand lightly and press cookies out flat.
  9. Bake in a moderate oven (375f) about 10 minutes.
  10. Peanut butter cookies variation: use 1 cup peanut butter in place of 3 cups ground peanuts; increase sugar to 1 1/3 cups.
