Peach Cobbler

Ingredients

  • 1 cup sugar
  • 2 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1 cup water
  • 2 tablespoon butter
  • 5 cup sliced, pared fresh peaches
  • 1 1/2 cup biscuit mix, (for biscuit topping)
  • 4 tablespoon sugar, (for biscuit topping)
  • 2/3 cup light cream, (for biscuit topping)
  • 2 teaspoon grated lemon peel, (for biscuit topping)

Directions

  1. Set oven for very hot, 450f.
  2. Blend 1 cup sugar, cornstarch, and cinnamon in 2-quart saucepan; add water.
  3. Bring to boil, stirring constantly.
  4. Remove from heat.
  5. Add butter and peaches.
  6. Pour into a shallow baking dish.
  7. Combine biscuit mix and 2 tablespoons sugar; blend in cream with a fork.
  8. Drop dough in 6 mounds around edge of baking dish.
  9. Combine 2 remaining tablespoons sugar and lemon peel; sprinkle on dough.
  10. Bake 25 minutes or until peaches are tender and biscuits golden brown.
  11. Serve warm with plain or whipped cream.
