Nut Caramels

Yield: 70 1-inch caramels

Directions

  1. Combine brown sugar, brown sugar, butter, light corn syrup, 1 1/3 cup condensed milk and 2/3 cup milk.
  2. Cook over a low flame, stirring constantly, until temperature reaches 246f or until a ball is formed when dropped in water.
  3. The time is approximately 1 hour.
  4. Remove from fire and add vanilla and pecan.
  5. Turn at once into a slightly buttered pan about 9 inches square.
  6. As soon as candy is cold, turn on waxed paper and cut in straight pieces about 1 inch square.
