Nudle (Noodles)

Ingredients

Directions

  1. Beat egg yolks.
  2. Add milk and beat.
  3. Add flour and salt.
  4. Stir lightly with a fork and turn onto floured board.
  5. Knead dough, working in additional flour.
  6. This requires about 1/2 cup flour.
  7. Do not overknead as the noodles will become tough.
  8. Roll the dough thin, as for pie crust.
  9. Cut into strips.
  10. Stack the strips and slice off narrow slices.
  11. Toss with a small amount of flour so that the noodles will not stick together.
  12. Drop noodles into a large kettle of boiling water or broth, slowly, and stir after each addition so that the noodles will not lump together.
  13. Cook for about 15 to 20 minutes.
