Griddle Cakes

Ingredients

  • 1 1/4 quart flour, (1 1/4 pounds)
  • 3 tablespoon baking powder, plus 1 teaspoon (1 1/4 ounces)
  • 2 1/2 teaspoon salt
  • 3 tablespoon sugar
  • 1 1/4 cup shortening, (10 ounces)
  • 1 1/4 cup boiling water
  • 5 eggs
  • 3 3/4 cup evaporated milk

Directions

  1. Sift flour, then measure.
  2. Resift with other dry ingredients twice.
  3. Melt shortening in boiling water.
  4. Add milk and beaten eggs.
  5. Combine liquid quickly with dry ingredients.
  6. Pour batter from a pitcher onto a hot griddle.
  7. Bake slowly until golden brown on both sides.
  8. Sour milk griddle cakes variation: combine 5 tablespoons vinegar with the milk; omit baking powder and add 2 1/2 teaspoons soda.
