Griddle Cakes
Ingredients
- 1 1/4 quart flour, (1 1/4 pounds)
- 3 tablespoon baking powder, plus 1 teaspoon (1 1/4 ounces)
- 2 1/2 teaspoon salt
- 3 tablespoon sugar
- 1 1/4 cup shortening, (10 ounces)
- 1 1/4 cup boiling water
- 5 eggs
- 3 3/4 cup evaporated milk
Directions
- Sift flour, then measure.
- Resift with other dry ingredients twice.
- Melt shortening in boiling water.
- Add milk and beaten eggs.
- Combine liquid quickly with dry ingredients.
- Pour batter from a pitcher onto a hot griddle.
- Bake slowly until golden brown on both sides.
- Sour milk griddle cakes variation: combine 5 tablespoons vinegar with the milk; omit baking powder and add 2 1/2 teaspoons soda.
