Couracka (Sauerkraut Soup)
Ingredients
- 1 cup cream
- 1 1/2 tablespoon flour
- 2 1/2 cup sauerkraut
- 1 quart water
- 1 teaspoon pepper
- 6 eggs
Directions
- Make a thickening of: cream, flour (the amount of flour depends on the thickness of the cream).
- Bring to a boil: sauerkraut (including juice), water.
- Slowly add the cream mixture to the kraut, stirring constantly.
- This should make a thin gravy, like soup.
- Salt to taste.
- Add pepper.
- Set aside on a very low fire.
- Drop eggs (more or less, according to the number of servings desired) into the soup mixture and poach.
- Keep on a low fire until the eggs are done.
- Serve this with potatoes that have been boiled in the jackets.
