Chicken Salad

Ingredients

Directions

  1. Take a pair of large chickens and, having cleaned and washed them thoroughly, boiled until the meat drops from the bones.
  2. Skin it and cut into dice.
  3. Season with salt and pepper to taste.
  4. Cut the white part of three stalks of celery into small pieces.
  5. Mix celery and chicken together.
  6. For the dressing: take the yolks of 3 eggs, 2 tablespoonfuls of olive oil, a large tablespoonful mixed mustard.
  7. Stir the yolks and mustard together until thick, stir in the oil, and, lastly, add 2 large tablespoonfuls of vinegar, stirring the ingredients together until the mixture is of the consistency of rich cream.
  8. Just before serving the salad, add the dressing, and mix well through the chicken and celery.
