Cheese Aigrettes

Ingredients

  • 2 ounce flour
  • 1 1/2 ounce grated cheese
  • 1/2 ounce margarine
  • seasoning
  • 1/2 cup water
  • deep fat
  • 1 large egg

Directions

  1. Make some choux pastry with the flour, margarine, water and egg, and add the cheese and seasoning.
  2. Have ready a pan of deep fat, heated until it gives off just a slight blue haze.
  3. Drop the mixture into it in teaspoonfuls, and fry gently for about 15 minutes to a pale golden-brown.
  4. Drain, and serve hot on cocktail sticks.
