Blueberry Pie

Yield: 2 9-inch pies



  1. Set oven for hot, 425f.
  2. Wash and pick over blueberries.
  3. Line 9-inch pie pan, using half the pastry.
  4. Roll out remaining pastry for top crust.
  5. Combine vinegar, sugar, and flour.
  6. Add to blueberries and mix lightly.
  7. Pour into pie pan; sprinkle with nutmeg.
  8. Dot with butter or margarine.
  9. Moisten edge of pastry with water; cover with top crust.
  10. Trim; press edges together with tines of fork.
  11. Prick top crust to allow steam to escape.
  12. Bake 10 minutes; reduce heat to moderate 375°: bake 25 minutes longer, or until brown.
