Beets California
Ingredients
- 2 bunches baby beets
- 1/4 cup butter, or margarine
- 2 tablespoon grated orange, peel
- 1/4 cup orange juice
- 1 tablespoon salt
Directions
- Wash beets; trim off roots and all but 1 inch of stems: add 1 cup boiling salted water.
- Cover; cook until tender, about 40 to 50 minutes.
- Drain; rub off skins under cold running water; remove stems.
- Melt butter or margarine; add orange peel, orange juice, and salt.
- Pour over beets; heat.
- Garnish with unpeeled orange slices cut in small sections.
