An Excellent Rice Pudding

Ingredients

Directions

  1. Put rice in an earthen basin.
  2. Soak for an hour in barely enough cold water to cover it.
  3. Add milk (alderney is best) and a tablespoon of vanilla extract.
  4. Sweeten to taste, and bake three hours in a moderate oven.
  5. When done, the milk will be very deep yellow and of the consistency of thick cream.
  6. Keep stirring from the bottom about every twenty minutes until nearly done; then let it brown.
  7. After cooling, put in the refrigerator.
