Split Pea Soup

Yield: 50 one cup servings

Directions

  1. Pick split peas over carefully.
  2. Wash.
  3. Cover with water and soak several hours.
  4. Drain.
  5. Add 1 3/4 gallons boiling water, the ham, and the onion.
  6. Roil until peas arc tender.
  7. There should he about 2 1/4 gallons pulp and liquid.
  8. Add milk, salt and pepper to taste.
  9. A few thin slices of frankfurter may be used as a garnish for each serving.
