Rolls

Yield: 18 dozen rolls

  1. Measure sugar, salt and shortening into mixing bowl.
  2. Add water and stir until shortening is melted and sugar dissolved.
  3. Add milk.
  4. When lukewarm, add yeast that has been softened in 1 cup lukewarm water.
  5. Add half the flour.
  6. Beat well, then add remaining flour.
  7. Knead until smooth and elastic.
  8. Cover and let rise in a greased bowl in warm place until a little more than doubled in bulk, about 2 hours.
  9. Punch dough down.
  10. Allow about 15 minutes to rise, then shape and place on greased baking sheets.
  11. Let rise again until doubled in bulk, about 1 hour.
  12. Bake in a hot oven (425f).
  13. Brush tops with melted butter.
  14. Sweet rolls variation: increase the sugar and shortening each to 1 quart (2 pounds); butterflies, neckties, twists, cinnamon rolls, scrolls, and snails may be made from this dough; yields 21 dozen rolls.
