Oatmeal Bread

Yield: 4 1 1/2 pound loaves

Directions

  1. Add boiling water to oatmeal and let stand 1 hour.
  2. Beat in the molasses, milk, salt, shortening, dissolved yeast and flour.
  3. Cover and let rise in a greased bowl until doubled in bulk.
  4. Knead well.
  5. Shape into loaves and put into greased bread pans.
  6. Let rise again until doubled in bulk.
  7. Bake in a hot oven (425f) 15 minutes, then in a moderate oven (375f) 45 minutes longer.
  8. If dry yeast is used, prepare this dough at night, let rise in a medium warm place over night, and until doubled in bulk in the morning; from this point proceed as above.
