Mashed Potatoes

Yield: 50 one-half cup servings

Ingredients

Directions

  1. Pare potatoes and cook until tender in boiling water to which salt has been added, about 40 minutes.
  2. Drain and force through a potato ricer, or mash.
  3. Save potato water.
  4. Add butter, milk and potato water, and more salt if needed.
  5. Beat until white and fluffy.
  6. More milk may be needed.
  7. Pile lightly on a hot dish.
  8. Amount of butter may be reduced or omitted if more evaporated milk and less water is used.
