Caramel Fudge Frosting

Yield: For 8 eight-inch layers

Ingredients

Directions

  1. Boil 1 1/3 cups sugar and 1 1/3 cups water until syrup is thick and a delicate amber color.
  2. Add rest of sugar and salt and stir to blend.
  3. Add 1 cup water and cook until caramel is dissolved.
  4. Add butter, then the milk gradually so that mixture docs not stop boiling at any time.
  5. With constant stirring, cook rapidly to the soft ball stage (235f).
  6. Cool.
  7. Add vanilla.
  8. Stir vigorously until icing crystallizes and becomes stiff.
  9. If mixture becomes too stiff, knead like fondant until plastic.
  10. Add just enough evaporated milk to make frosting soft enough to spread.
