Brown Candy

Yield: 2.5 pounds candy

Directions

  1. Melt 1 cup sugar in a heavy skillet over iow heat, stirring constantly until melted and light caramel-colored.
  2. Pour slowly into saucepan containing 2 cups sugar and cream.
  3. Cook to firm ball stage (260f), stirring constantly.
  4. Remove from heat.
  5. Add soda and stir vigorously.
  6. Add butter and cool for 10 minutes.
  7. Add vanilla and beat until mixture is thick and loses shininess.
  8. Blend in pecan.
  9. Spread in greased pan and cut in 1-inch squares,.
