Baked Prune Whip

Yield: 6 servings

Ingredients

Directions

  1. Remove pits from prunes and mash to a pulp.
  2. Add lemon juice, peel, and 2 tablespoon sugar; blend well.
  3. Add remaining 2 tablespoon sugar to egg whites; beat until stiff.
  4. Fold prune mixture slowly into egg whites.
  5. Pile lightly in greased baking dish.
  6. Bake in moderate oven (350f) 20-30 minutes.
